I was a little disappointed that I hadn’t been to The Westport Cafe & Bar in months, so when I finally made it back I was excited about all the new drink options. I opted for the Penrose, an egg white cocktail with cognac, pear brandy, and hibiscus.
The drink: Light, frothy, fruity, refreshing.
This cocktail has a lovely texture and flavor. The hibiscus and pear brandy add a hint of sweetness and fruitiness, while the addition of lemon brings out the lightness of the egg whites. Egg white cocktails can seem daunting to those who haven’t tried them before, but I urge you to give this one a go! It’s delicious and quite nice.
